Summer has officially arrived, and that means it is time to haul out the grill and have a barbecue. Instead of making the same old dishes, make chipotle-maple chicken thighs with this easy-to-follow recipe. Your guests will enjoy it as much as you will, and it will become your new go-to recipe for summer barbecues.
This recipe makes 6-8 servings. That’s plenty for a fun get-together.
Gather Your Ingredients
Begin by gathering your ingredients. You will need:
- 1 tablespoon of smoked paprika
- 1 tablespoon of packed dark brown sugar
- 5 teaspoons of salt
- 2 teaspoons of dry mustard
- 5 teaspoons of garlic powder
- ½ teaspoon of chili powder
- ¼ teaspoon of black pepper, freshly ground
- 5 pounds of skinless and boneless chicken thighs
- ½ cup of ketchup
- ¼ cup of maple syrup
- 2 tablespoons of molasses
- 1 tablespoon of finely chopped chipotle chili peppers in adobo sauce
- 2 teaspoons of Worcestershire sauce
- 1 teaspoon of dry mustard
- ½ teaspoon of garlic powder
- 3 tablespoons of lime juice, freshly squeezed
Preparing the Chicken
Throw the paprika, salt, brown sugar, chili powder, and black pepper in a small bowl. Add one teaspoon of dry mustard and one teaspoon of garlic powder and mix everything together. Sprinkle the mixture over both sides of the chicken thighs, and then pat it, so it sticks. Cover the thighs and put them in the refrigerator for a half-hour.
Next, take out a small saucepan. Put in the maple syrup, ketchup, molasses, Worcestershire sauce, and chipotle peppers. Add a half teaspoon of garlic powder and the rest of the dry mustard. Turn on the burner, and when the mixture comes to a boil, lower the heat. Keep it uncovered, and let it simmer for 15 minutes. Stir it occasionally, so it won’t stick.
Cooking the Chicken
Oil your grill rack, and put the chicken on the grill. Cover it, and cook the chicken for four minutes. Uncover the grill, flip the chicken, and cook it for another four minutes. Take out the sauce, and brush it over the chicken. Cook the chicken for another minute and flip it. Then, brush the other side with the sauce, and cook it for another minute.
Take it off the grill, and let it sit there for five minutes. Then it will be ready to eat.
